Sweet Lemon Shrimp

As summer time nears, I think it’s time for a little lighter fare.  I made this shrimp earlier in the week and it was super easy and delicious.  I mixed the marinade in the morning, put the shrimp and the marinade in a large ziplock bag (I buy the shrimp that is already peeled and deveined), and let it marinate all day while I was at work.

When I got home from CrossFit, all I had to do was throw it in the oven for 8 minutes while Jack and I had a glass of wine on the back deck – so easy!

For those of you who are paleo, I have to warn you that Hoisin sauce is not paleo.  In fact, the ingredient list is not all that great at all.  So, if you’re up for it, there are a lot of paleo Hoisin sauce recipes online.  Here is one from Crunchy Mama:

I was lazy and used the store bought, so I have no idea how the homemade compares.  If you try it out, let me know!
