I know a lot of you are going to see this recipe and think, “uggg, I don’t like kale, I’m not going to try this.” You should resist that impulse. This is a surprisingly good recipe. Personally, I love kale, but I can understand why some people hate it. My friend, Bea, also known as “Coach Bea,” is one of those people. However, I had her over one night and we had this for dinner. Like a good friend, she tried it out and she liked it so much she asked for the recipe!
The recipe calls for grilling the kale. You need the dinosaur kale to do that. If you use the smaller, curly kale, you can also just spread the kale in a single layer on a baking sheet and broil it in the oven for 10-20 minutes. Just keep an eye on it and when it starts to look crispy on the edges, it’s ready.
The ginger steak is also amazing. Try to use fresh ginger if you can, it gives it a really great flavor!
