Today’s Meal of the Week comes to us via Mark’s Daily Apple. I can tell when a recipe is (1) good, and (2) easy to make, when Jack volunteers to make it. This is one of those recipes.
We do make one small change to the recipe that you might want to try. The recipe calls for cauliflower rice. Jack and I don’t really like cauliflower rice. It’s okay, but it’s not great and therefore not worth the trouble. BUT, we LOVE mashed cauliflower and this meal is amazing with mashed cauliflower!
If you’ve never made mashed cauliflower, here’s an easy way to make it. All you need is a bag of frozen cauliflower (you are welcome to use fresh, but chopping the cauliflower makes a mess and frozen is much easier if you’re short on time), butter, salt and pepper.
Easy Mashed Cauliflower:
- Steam the cauliflower in the microwave according to the directions on the bag.
- Place steamed cauliflower in food processor or blender.
- Add butter, salt and pepper to taste. If you have some milk on hand, you can add a little of that too. We don’t typically have any milk at home and it’s just as tasty without it.
- Blend the cauliflower until smooth and creamy. I typically blend it, taste it, add more butter, salt or pepper if needed and blend some more until I’m satisfied with the taste.
