Seriously, you need to make this recipe from PaleOMG as soon as possible! It is ridiculously good. I made it earlier this week and I can’t wait to make it again. I pretty much stuck to the recipe, but Jack insisted that I double the meat, which, as it turns out, was a pretty good idea. Also, the recipe says to use a 8X8 dish. With the meat doubled, I used a 13X9 casserole dish and made six normal people servings, three Jack servings (in all honesty I could have eaten a double serving also – it was so good).
I used the MyFitnessPal app to calculate the nutritional information. MyFitnessPal allows you to create recipes. You enter all of the ingredients and the number of servings and it will calculate the per serving nutritional information. Next time I make this, I would like to experiment with using a leaner meat. The italian sausage is pretty high in fat and calories, but it really makes the recipe. I can’t imagine it being nearly as good with ground chicken or turkey, but we’ll see. Here is the nutritional information for the recipe with double the meat:

- Fat: 32.2
- Carbs 10.9
- Protein: 24.7
In other news, Jack and I are starting a Whole 30 tomorrow. If you don’t know what that is, you can find more information here. We’ve done a Whole 30 once before and had great results. Unfortunately, I have a work retreat all day Wednesday and all meals are provided, so fingers crossed they have something other than sandwiches!
