I stumbled across Once a Month Meals today and decided to give it a try. I’ve been finding it increasingly hard to find the time to plan, prep and cook meals for the week and this website does all the work for you. The idea behind Once a Month Meals is that you prep all of your meals for the month in one day and then freeze the meals for quick and easy cooking throughout the month. They also have a mini version if an entire month seems overwhelming. I’m trying out the mini version this week. I’ve tried frozen meals before without much success, so I’m hoping this will yield better results. The great thing about the website is they have several different meal options such as paleo, whole foods, vegetarian, diet, and gluten-free. Once you select your menu, the website provides you with a shopping list, prep instructions, cooking instructions, recipe cards and labels for your ziplock bags. The recipe ingredients are automatically adjusted for the number of people you need to serve. It really makes the whole process so easy – let’s just hope the meals are good!
On the menu for this week:
Butternut Squash Kale Ground Beef Breakfast Bowl
Pork Tenderloin with Peach Salsa and Blueberry Syrup
Grilled Cilantro Lime Chicken
Orange Apricot Pork Chops
Check back in next week to see how it all turns out!
